In response to the latest trends in hygiene regulations and production procedures, and with specific regard to the HACCP standards, Nilma designed the ideal solution: the KSP 40 pass-through combi oven.
This patented electric oven, complete with a trolley able to take twenty 2/1 GN containers, has two doors, so the trolley can enter from the cooking side (low risk) and exit to the other distribution side (high risk).
The oven, installed in the partition between these two zones, creates a “thermal barrier” that maintains foods in the right conditions to ensure hygiene and reduce the risk of contamination.
Designed on Nilma’s long experience in the production of its Konvectio Steam combi ovens, KSP 40 retains all the plus factors of the existing range, including extreme operating versatility, reduced need for condiments, higher product yield, high production capacity, and easy and safe food handling. What’s more, the exclusive technical features incorporated in KSP 40 also ensure the uniform cooking across all containers, regardless of the cooking mode selected – convection, steam or combined.
To ensure that foods such as roast meats, that need to be soft in the middle but browned on the outside, are done to a turn, the user simply inserts the product-core probe and selects the right temperature.
KSP 40 is complete with a touch screen PLC control panel allowing the automatic recipe management. Upon request, it can be connected to the Nilma CCMP interactive software, enabling the traceability of recipe ingredients, the data storage and the appliance diagnostics, also remotely. Everything under control, even from your smartphone.
