Salsamat SV is a tilting braising pan with mixing system designed for vacuum cooking. This special appliance is ideal for use in restaurants, food production centres, delicatessens, and small industrial food processing and ready-meal production plants. It is particularly suitable for cooking jams and fillings, browning meat, sautéing vegetables, cooking sauces and ragouts, and making stews, goulash and risottos.
As well as the countless practical and cost-saving benefits of the standard Salsamat pan, the SV model also provides the vacuum cooking capability. This is enabled by the creation inside the pan (which has an airtight lid) of vacuum, reducing the boiling point for a more delicate cooking. What’s more, since with this technique air is removed from the pan, the absence of oxygen prevents the oxidation of foods, guaranteeing a brighter and more natural colour.
Another benefit of vacuum cooking is the improvement in the taste of foods. When cooked at lower temperatures, foods conserve a higher percentage of their vitamins and proteins, enhancing their nutritional value, taste and aroma.
Salsamat SV can be equipped with a touch screen PLC, connectable to the CCMP interactive software for the recipe management, the complete traceability of ingredients and for the control of all HACCP parameters.
As an essential accessory, Salsamat SV is equipped with an automatic mixing system, also available when the lid is closed, to prevent the product from sticking to the bottom. When cooking is complete, the user just presses the pan tilting button for the automatic discharge of the product into the special trolley.
Salsamat SV is produced in two models of 40 and 65 litres, both electrically operated.
