The Quick Frost blast chiller is an essential appliance for rapidly reducing the temperature of freshly cooked foods. This procedure, compliant with the HACCP regulations, prevents the proliferation of the bacterial load, which is most intense between 65°C and 8°C. A product core probe provides a precise measurement to ensure that the safe temperature is reached.
The blast chilling process extends products’ shelf life by several days, creating a reserve of refrigerated food ready for reactivation.
What’s more, Quick Frost also has the practical benefit of separating production and distribution times, so that working patterns can be optimised. Moreover, the cold food portioning is easier and more hygienic, favouring better presentations.
Quick Frost is available in two models with trolleys having capacities of 10 and 20 2/1 GN containers, or 20 and 40 1/1 GN containers. Trolleys are compatible with the Konvectio Steam 20 and 40 combi ovens so, after cooking, they can be transferred directly to the Quick Frost blast chillers, keeping the oven temperature and saving time.
